CARIBBEAN FISH STEAKS

Serves 4

INGREDIENTS:
4 tbsp olive oil
6 shallots, finely chopped
2 tbsp roasted garlic, purée
1 fresh green chili, seeded and finely chopped
2 cups chopped tomatoes
3 bay leaves
1/4 cayenne pepper
1-1/2 tsp crushed allspice
juice of 3 limes
4 cod steaks (or haddock or swordfish)
1 tbsp raw honey
2 tsp angostura bitters
sea salt

PREPARATION:

– Heat the oil in a frying pan. Add the shallots and cook for 5 minutes until soft. Add the garlic and chili and cook for 2 minutes, then stir in the tomatoes, bay leaves, cayenne pepper, allspice and lime juice, with salt to taste.

– Cook gently for 15 minutes, then add the cod steaks and baste with the tomato sauce. Cover and cook at medium heat for 10 minutes or until the steaks are cooked. Transfer the steaks to a warmed dish and keep hot. Stir the honey and angostura bitters into the sauce, simmer for 2 minutes then pour over the fish. Serve with steamed okra or green beans.
