PIRI-PIRI SHRIMP WITH AÏOLI

Serves 4

Piri-piri is a Portuguese hot pepper sauce.

INGREDIENTS:
1 fresh red chili, seeded and finely chopped
1 tsp paprika
1 tsp ground coriander
1 tbsp roasted garlic, purée
juice of 1 lime
3 tbsp olive oil
20 large raw shrimp, heads removed and deveined
sea salt and ground black pepper

AÏOLI
1 cup mayonnaise
2 tbsp roasted garlic, purée
1 tsp Dijon mustard

PREPARATION:

– Make the aïoli. Mix the mayonnaise, garlic and mustard in a small bowl and set aside.

– Mix the chili, paprika, coriander, garlic, lime juice and olive oil in a bowl. Add salt and pepper to taste. Place the shrimp in a dish. Add the spice mixture and mix well. Cover and leave in a cool place for 30 minutes.

– Thread the shrimp onto skewers and broil, basting and turning frequently, for 6-8 minutes until pink. Serve with aïoli, garnished with two or three extra chilies.
