GRILLED SALMON WITH MANGO & AVOCADO SALSA

Serves 4

INGREDIENTS:

4X 6-8- ounce fresh salmon fillets (with skin), 1 inch thick
2 tbsp sugar
2 tsp finely shredded lime peel
1 tsp sea salt
1/4 tsp red pepper
1 large mango, peeled, seeded, and cut into thin bite-size strips
1 avocado cut in small cubes
1/4 cup fresh lime juice
1 small cucumber, seeded and cut into thin bite-size strips
2 green onions, sliced
2 tbsp snipped fresh cilantro
1 tsp snipped fresh mint
1 small jalapeno pepper, seeded and finely chopped
1 tbsp roasted garlic

PREPARATION:
Rinse fish; pat dry. Place fish, skin side down, in a shallow dish.
For rub, in a small bowl stir together sugar, lime peel, ½ tsp of salt, and the red pepper. Sprinkle rub evenly over the fish. Cover and marinate in the refrigerator for 4 to 24 hours.

Meanwhile, for salsa, (prepare only few hours before serving) in a medium bowl combine mango, avocado, cucumber, green onions, lime juice, cilantro, jalapeno, garlic and the remaining salt. Cover and refrigerate until ready to serve.

Heat the grill at medium temperature. Place fish, skin side down. Cover and grill for 15 to 20 minutes or until the fish flakes easily with a fork. If desired, remove skin from the fish. Serve the fish with salsa.
